I went out to eat not long ago at a local place. I ordered their carnitas “street tacos,” which come three to an order. When they arrived I learned that it is perfectly possible to ruin an otherwise delicious taco–tender pork, diced onions, fresh cilantro, creamy avocado–by putting mayonnaise on it.
Oh, sure. They call it “jalapeño aioli.” But no matter what you call it, it’s wrong. Ok, maybe if you are making a remulade or tartar sauce-like thing to top a fish taco? Maybe. Otherwise it’s just no. Mayonnaise on a taco is a culinary crime punishable by having your taco license suspended indefinitely.
Have they never heard of sour cream? Mexican crema? How about a little sour cream with fresh lime juice and a pinch of salt? C’mon, people. This is so easy to get right.
